friday ramblings…

oh friday, i think it might be my fav day of the week. the weekend is just spread right out in front of you. i have so much fun planned for this weekend. tonight i’m going to get a little mani and then scouting for cool photoshoot locations for a senior session i have tomorrow night. i am so so excited about that one!!! sunday is church and then i’m cooking a big mexican meal for us. i.cant.wait.

also in other randomness…in april i made this post about a friendship that was lost and my sadness about it. i have to say it’s still, after all this time, weighing on my mind. for some reason it’s hard for me to accept that it’s over and move on. i think about her a couple times a week, wonder how she is doing and how her kids are. it’s just sad…time helps heal all things i guess.

zucchini pie

this is the BEST zucchini pie i’ve ever had…my fam loves it!!! and if your like us, normally at this time of year you have so many zucchini’s you don’t know what to do with them all.

1 medium zucchini, peeled and sliced
1/2 cup sugar
1 cup milk
3 tablespoons flour
1 teaspoon vanilla
3 eggs
1 unbaked pie shell (unbaked is VERY important)
cinnamon to taste

cook zucchini in small amount of water in a saucepan until tender, drain. combine zucchini with sugar, milk, eggs, flour and vanilla in blender. process until well mixed. pour into UNBAKED pie shell, sprinkle with cinnamon. bake at 425° for 10 min then reduce temp to 350° and continue to bake for 30 min.
