oh my yummo goodness

did you ever just HEAR a food mentioned and you instantly crave it even though you’ve never had it?  i do that sometimes, i hear it and then KNOW i have to try it sometime soon…and i obsess about it until i have it…a wee possibility that might be why i had such a weight issue (did you catch that i said HAD and not HAVE, ha)…

so today i was sitting here browsing facebook and saw jody ferlaak mention carrot cake pancakes…OH MY GOODNESS, carrot cake pancakes?!?!  is there really such a thing?  then all i could imagine was steaming hot carrot cake pancakes smeared with a cream cheese frosting…i am now hooked and HAVE to have them sometime in the immediate future (like this saturday morning since saturday is my “un” diet day)…

i thought i would just do a quickie search for a recipe and woah, this little beauty showed up right on top waving her hands and screaming to me…are you even serious, a cream cheese spread??  the thoughts of it are almost too much…oh sweet sweet gorgeous pancakes, you and i have a date saturday morning so make sure to look your best  🙂

Carrot Cake Pancakes

1 1/4 cups all-purpose flour
2 tablespoons finely chopped pecans
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground ginger
Dash nutmeg
1 egg, lightly beaten
1/3 cup packed brown or granulated sugar
1 cup milk
2 cups finely grated carrots
1 teaspoon vanilla extract

Cream Cheese Spread

4 ounces cream cheese
1/4 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
1 dash ground cinnamon

In a bowl, combine flour, pecans, baking powder, cinnamon, salt, ginger, and nutmeg.
In a separate bowl, combine egg, brown sugar, milk, carrots, and vanilla; mix well.
Stir carrot mixture into dry ingredients until moistened. Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on the top of pancake; flip and cook until golden brown.
For topping, blend cream cheese, powdered sugar, milk, and vanilla until smooth. Sprinkle with cinnamon, and serve with pancakes.

busy as a bee

this week is sooooo busy…cheer camp for 3 evenings, client meetings and senior pics…sunday i have nothing scheduled and i am sooooo going to just chill and watch movies with my fam {minus the oldest}…i might just throw my jammies on and my hair up in a bun once i come home from church and just relax…

i’ve also totally sucked at {semi} wordless wednesday posts…maybe they’ll make a reappearance this fall…i just haven’t had much time this summer to take pictures just for the heck of it…

i also wanted to jot some of my recent convos with my kids down here, so i don’t forget them…

jade…”mama, do you remember when we    {fill in the blank with something random}“
me…”no jade, that never happened”
jade…looking soooo serious…”oh, i HATE when i get real life and my dreams mixed up”

(ok so, while some might find this offensive and not funny at all i find it HILARIOUS)

weekend recap {minus pics}

so i totally missed this post yesterday…i know i know…sometimes i’m totally suckish and this *blogging everyday* thing…

friday…
i took the day off and it was sooo much needed…we started off our morning heading to clearfield {i forgot something at work, ugh}…then we headed to tractor supply to see what gocarts they had…then we took the kids to delgrosso park…we were hoping it wouldn’t rain and it didn’t BUT it was soooo freezing cold!  i never took my long sleeve shirt off all day and we ended up having to buy jade a long sleeve shirt…so that meant no water park for us  🙁  the kids were bummed but that’s how it goes…we were home by supper time and worn out…

saturday…
we got up bright and early and headed to altoona with my mama for school clothes shopping…believe it or not, this is one of my kids FAVORITE days!  first, they love spending the day with nanny {sadly, that doesn’t happen very often anymore}, they love cothes shopping and they of course love buying things…my oldest little moreso than the youngest…joey told me saturday “i just like to look nice” and that he does…he SURE has expensive taste in shoes too, geesh…now jade on the other hand, she *tries* to like shopping but once she is done she is DONE…we shopped for 9 hours straight and my mama could have kept going, she is an amazing shopper and raised me right 🙂  we got home around 7 and my kids were whooped…

sunday…
after church we had a nice little lunch at home and just hung around the house for a bit…we had a cookout with friends for dinner…it is a family joe and his brothers grew up with…they lost their father not long before joe lost his mother, so it was a kinda “in memory of” cookout…it was a really, really nice time…

so that is basically our entire weekend in a nutshell…really good, fun times!
