this poem was on our penndot homepage today…this basically sums up our lives during the winter…and she makes some REALLY good points…soooooooooo MANY people don’t respect the job these guys do during the winter…
It’s Christmas Eve and the snow has begun,
It’s time for family, food, and fun.
But on this day, there is for some
Work that still needs to be done.
He dawns his long johns, boots, and coat
And kisses his family goodbye;
There’ll be no food or fun for him
On this lonely, snowy night.
His food is left on the table,
And he packs a lunch on-the-go;
He climbs up in the lonely cab
For a long night of plowing snow.
He could stay home, but duty calls
And he’s off to do his all
To keep the roadways free of snow
And safe for one and all.
Out on the road, he gets no respect,
Yet, still he doesn’t rest.
He’s dedicated to his job
And always does his very best.
Through ice and snow, he works all night
Then goes home to get rested and warm.
And the very next day, he’s called back out
To fight the oncoming storm.
So, next time you’re cozy and snug,
Looking out at the falling snow;
Say a little prayer, if you can,
For the PennDOT snow plow man.

meal planning monday
aahhhh meal planning monday, i love it soooooo much! in fact, i love it so much that i started planning it last week. i know, freakish…
monday – chicken pie…this is, without a doubt, one of my FAV meals!!! i will alter it a bit to make it healthier (which means less butter, lol…also instead of using buttermilk i use skim milk with a tsp of vinegar in it)…
tuesday – french onion soup…my fav soup EVER…absolute comfort food…jade likes it, joey does not…i will use low-sodium broths and cut the butter way down to make it diet friendly…
wednesday – fairly sure we’ll have some leftovers to eat up…and i’m certainly not going to complain about eating chicken pie or french onion soup again (although the littles will both complain…and probably opt for hot pockets)
thursday – grilled fish and baked potatoes…SUPER healthy, love that! also love how quick it is…i buy gortons garlic butter grilled fillets, only 100 calories per fillet with 17 g protein!!!
friday – grocery night which means out to dinner with the littles…
saturday – crispy fried tacos, yellow rice, nachos with cheese and perhaps not fried ice cream…sure do love me some mexican food…i have to add saturday is my “off” diet day, so that’s why this dinner is NOT diet friendly…
sunday – bbq chicken, pugutch and broccoli with cheese…i have to tell you, this bbq chicken is INSANELY good, for real…and pugutch is just good comfort food, i will cheat and use crescent rolls and instant potatoes…yummo! i will use low fat crescent rolls and fat free cheddar cheese to make it healthier.
