canning anyone??

sooooo as most of you know, i love to can…i know, it’s freakish BUT seriously, i love it…i love at the end of the day having something to show for how hard i worked…and that we basically reap the rewards of it all year long…

right now the tomatoes and peppers are really coming on…so that means sauce and hot pepper dip…i’m also going to try a new recipe this year, hot pepper mustard sauce (recipe below)…so what i want ya’all to do is leave me your FAV canning recipe in the comments section or email it to me at cutcutler1903@aol.com i loooove to try new recipes!!!

hot pepper mustard sauce

soak 48 – 50 peppers (hot wax/hungarian) in 1 cup salt and enough water to cover peppers.  soak for 2 hours or overnight.

drain peppers.  shread peppers to desired texture.  heat of mixture is controlled by seeds, remove all seeds for a milder mix (this is what i’ll be doing, i’ll probably put one pepper in WITH seeds)

put peppers in kettle with the following:
1 quart yellow mustard (french’s)
1 quart vinegar
4 cups sugar
1 tablespoon salt

cook until it comes to a boil (stir frequently), then take 1 cup flour mixed with enoughw ater to make at thickening, add it to the pepper mix and cook until it thickens.  put in jars and seal

1 batch = 9 pints

weekend recap {minus pics}

we had a great {but sad} weekend…

friday…
friday after i got off work i rushed home to shower and get ready for my meeting with a future bride.  we were also watching my cousin krista’s two kids while she attended her grams viewing.  so joe, jade, tori, tristan and i all headed off to state college (joey had football practice).  i had a wonderful meeting with the sweetest bride-to-be.  we ate dinner at subway and got a few groceries that i needed.  then we headed home.

saturday…
saturday morning i got up early and put a crockpot full of meatballs on to cook for the meal after aunt grace’s funeral.  we got ready and headed down to the viewing.  when we came back home we got ready and headed out for lunch.  joey didn’t want to miss out on the meal and he was going to a friends house to stay saturday night.  when we got back home i received word that my sweet grandma seymour in ny has passed away.  i was hoping to see her when we went up labor day weekend.  by then it was time for me to get ready for my senior photoshoot saturday evening. 

sunday…
i got up early and started breakfast, i made the carrot cake pancakes with cream cheese spread.  and oh, they didn’t disappoint.  they were just delish!!  we then got ready and headed off to church.  after church jade’s friend maddy came over to spend the day and play.  we went out for dinner and then back home to play.  later in the day we decided it would be fun if maddy stayed the night.  i just love listening to little girl giggles in my house  🙂  so a good good time was had by all yesterday.  joey decided to stay an extra night at his friends house.

oh my yummo goodness

did you ever just HEAR a food mentioned and you instantly crave it even though you’ve never had it?  i do that sometimes, i hear it and then KNOW i have to try it sometime soon…and i obsess about it until i have it…a wee possibility that might be why i had such a weight issue (did you catch that i said HAD and not HAVE, ha)…

so today i was sitting here browsing facebook and saw jody ferlaak mention carrot cake pancakes…OH MY GOODNESS, carrot cake pancakes?!?!  is there really such a thing?  then all i could imagine was steaming hot carrot cake pancakes smeared with a cream cheese frosting…i am now hooked and HAVE to have them sometime in the immediate future (like this saturday morning since saturday is my “un” diet day)…

i thought i would just do a quickie search for a recipe and woah, this little beauty showed up right on top waving her hands and screaming to me…are you even serious, a cream cheese spread??  the thoughts of it are almost too much…oh sweet sweet gorgeous pancakes, you and i have a date saturday morning so make sure to look your best  🙂

Carrot Cake Pancakes

1 1/4 cups all-purpose flour
2 tablespoons finely chopped pecans
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground ginger
Dash nutmeg
1 egg, lightly beaten
1/3 cup packed brown or granulated sugar
1 cup milk
2 cups finely grated carrots
1 teaspoon vanilla extract

Cream Cheese Spread

4 ounces cream cheese
1/4 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
1 dash ground cinnamon

In a bowl, combine flour, pecans, baking powder, cinnamon, salt, ginger, and nutmeg.
In a separate bowl, combine egg, brown sugar, milk, carrots, and vanilla; mix well.
Stir carrot mixture into dry ingredients until moistened. Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on the top of pancake; flip and cook until golden brown.
For topping, blend cream cheese, powdered sugar, milk, and vanilla until smooth. Sprinkle with cinnamon, and serve with pancakes.
