My Top {5} Fav Bread Machine Recipes

I am a self-professed bread machine addict.  I love love love my bread machine {which, fyi, I bought for $5 at a yard sale}.  There are so many things you can do with your bread machine and it’s so super easy!  Not to mention the control you have over what your family eats.  I wanted to list my top 5 fav recipes for y’all to enjoy!  I use a West Bend 41410 Hi-Rise Loaf Programmable Breadmaker, 2.5-Pound

English Muffins

1 cup milk
3 tablespoons butter
1 egg
1/2 teaspoon salt
2 teaspoons sugar
3 cups all-purpose flour (or more)
1 1/2 teaspoons dry yeast
cornmeal

Directions:
Put ingredients in the machine in the order listed.
Start the dough cycle.
Sprinkle corn meal over your work area.
When the cycle is finished, use your hands to pat the dough into a 1/2 inch thick rectangle.
Turn the dough so that each side gets lightly coated with cornmeal.
Using a biscuit cutter, cut into 8 to 10 rounds.
Place the rounds on a baking sheet.  Cover and let rise for 20- 30 minutes, until not quite double.
Heat a dry cast iron skillet or griddle over a low flame.
Cook the muffins about 5 to 7 minutes on each side, they should be golden brown when you turn them.
Split the muffins with a fork or serrated knife and serve warm.

White Bread

1 cup + 1 tbs water
1 large egg
4 1/2 teaspoons vegetable oil {I also use garlic olive oil}
3 1/4 cups flour
1/4 cup sugar
1 1/2 teaspoons salt
2 1/4 teaspoons instant yeast

Directions:
Place all ingredients in bread machine in order recommended.
Select the basic bread setting.
Check dough after 5 minutes of mixing, if needed add 1-2T of water or flour.
Bake as normal.
Take out of pan and let completely cool slightly before slicing.

Cinnamon Rolls

1 cup warm milk
2 eggs, room temperature
1/3 cup margarine or 1/3 cup butter, melted
4 1/2 cups bread flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons bread machine yeast

Filling
1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup margarine or 1/3 cup butter, softened

Frosting
3 ounces cream cheese
1/4 cup butter
1 1/2 cups confectioners’ sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Directions:
Place all ingredients in bread machine in order recommended by manufacturer.
Select DOUGH cycle press Start.
In separate bowl combine cinnamon and sugar.
After dough has finished, turn it out onto lightly floured surface and roll into a 16×24 rectangle.
Spread dough with butter and sprinkle evenly with cinnamon and sugar mixture.
Roll up dough and cut into 12 rolls.
Place rolls in lightly greased 9×13 pan.
Cover and let rise until almost doubled (about 30 min).
Preheat oven to 400 degrees F.
Bake rolls for 14-16 minutes.
While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners sugar, vanilla extract and salt. Spread frosting on warm rolls.

Dinner Rolls

3/4 cup water
2 extra-large eggs
3 tbl butter
3 tbl sugar
1 tsp salt
3 1/2 cups flour
2 1/4 tsp yeast

Directions:
Put all ingredients in your bread machine, according to your manufactures directions.
Select the dough setting. Mine lasts 1 hr 20 mins.
Once your dough cycle is finished, punch down dough and let it rest for 5 minutes.
Pull apart the dough in small sections to make balls a little bigger than a golf ball. It really depends on the size of roll you want. Just remember they will rise again.  (I normally grease my hands well before I do this. It not only helps the dough to not stick to you but it helps to make the tops of the rolls buttery golden.)
Place them on a lined baking sheet, sprayed with Pam cooking spray.
Let rise for about 10-15 minutes.
They will rise a little, but won’t necessarily double in size.
Bake at 350 for about 10 minutes. I check mine often.
Once they are light brown on top I pull them out, rub the tops with butter and let them cool on the pan.

Homemade Hotpockets

Filling choices
meatballs and sauce {I use leftover meatballs + sauce from spaghetti night}
ham and cheese
egg, cheese and bacon
chicken, bacon and cheese
chicken, broccoli and cheese
taco meat and cheese

Directions:
Use white bread recipe above.  Use dough setting rather than bread setting.
After dough has finished, turn it out onto lightly floured surface and roll into a rectangle.
Cut dough into 6×8 pieces.
Fill middle with filling then fold in half and crimp edges with a fork.  Wet the edges a bit with water to make sure it sticks well.
Preheat oven to 400 degrees.
Place on a stoneware or baking sheet, and bake for 10-15 minutes until lightly browned.

Pepperoni Cheesy Bread

 

If there is one thing this household likes, it’s pepperoni and cheese.  So today, while brainstorming dinner, I came up with a fabulous idea.  A local grocery store has a bread we love, pepperoni cheese bread.  And y’all know how obsessed I am with my bread machine.  So, why couldn’t I make that bread myself?  Oh yes, a great idea was born.



Ingredients

1 ¼ cups luke-warm water
2 tablespoons extra virgin olive oil {I used Tastefully Simple Garlic Oil}
2 tablespoons sugar
1 teaspoon salt
3 ¼ cups bread flour
½ teaspoon Tastefully Simple Garlic Garlic
¼ cup Parmesan cheese
½ cup shredded mozzarella cheese
½ cup sliced and finely chopped pepperoni
2 ¼ teaspoons active dry yeast

Directions

  1. Toss all the ingredients in a bread machine and set it on the dough cycle. You can bake it in the bread machine if you want, but I wanted more control over it and I like the shape of the loaf better when it’s baked in a loaf pan.
  2. When the dough is done, take it out and divide it into two equal amounts.
  3. Spray your bread loaf pan and put half the dough in the bottom.
  4. Put a layer of pepperoni and mozzarella cheese on top of the dough.
  5. Put the other half of the dough on top.
  6. Cover and let rise in a warm place until doubled in size, which can take anywhere from 30 minutes to 2 hours.  {I normally turn my oven on to 170 degrees, let it heat up and turn it off.  I put my dough on the top shelf.  On the bottom shelf I put another loaf pan full of hot water.  The heat and steam will help your bread rise faster.}
  7. Bake at 375 for about 35 – 40 minutes or until the top is a deep golden brown and the bread sounds hollow when you tap it.
  8. Remove the bread from the pan and place the bread on a rack to rest for 5 to 10 minutes (if you can stand to wait that long). That’s the hardest part … the waiting … when your house is full of that delicious fresh bread aroma and your mouth is watering …

Super Creamy Mac and Cheese

Is there anything that screams comfort food as much as creamy mac and cheese? This is one of my fav meals.  I love me some homemade mac and cheese!  If you make it, I will eat it. I mean seriously, pasta, cheese, a little milk, a little salt, what’s not to love?  And that “crusty” top, oh my goodness. Does anyone else love that crunchy topping?

I like adding some different ingredients into the mix – including bacon or shredded chicken. The reason I love this recipe so much is because its the perfect base mac and cheese to experiment with while being perfectly delicious on its own. I really hope you enjoy it!

Cook macaroni as normal and drain.  Sooo, I’m not a fan of doing dishes, so we want to dirty as little dishes as possible.  Leave the macaroni in the strainer and use the same pot to make your cheese sauce.  

First we are going to make a roux. A roux is a mixture of fat (usually butter) and flour that makes the base of the sauce. In this recipe we start by combining the butter and flour first. To do this, add butter into pot and melt over medium heat. Once melted, add flour. Continually whisk for a few minutes, until it looks like the picture below.
Now slowly add in the milk. The trick is to add the milk slowly, while stirring, to try and avoid clumping. Whisk constantly until the mixture thickens.
Next you add the cheese and spices.

Mix until cheeses are melted.

Turn around to grab the bench to stand on so you can get a better picture of you pot.  Oh, hey puppy.  

Add macaroni back to pot stir to mix it well.  Pour it into your greased pan.

This is where I like to get creative!  I had a bit of bacon left in the fridge, so I added it to the top.  I always sprinkle some cheese on top so my breadcrumbs will have something to stick to.

I also grabbed a small handful of Durkee french friend onions, crumbled them up and added those.  

Cover the top with either breadcrumbs, crunched up potato chips or panko crumbs (which is what I used here).

Add a few pats of butter to the top.  Pop it in the oven.

Ingredients

1/2 lb. Standard Macaroni
2 cups milk
1/2 t salt
1/2 t dry mustard
1/4 t garlic powder
1/4 t paprika
1/4 cup butter

1/4 cup flour
1 cup sharp cheddar cheese
4 oz. cream cheese

Instructions

Preheat oven to 400 degrees.
Place a pot of salted water on to boil for pasta.
When water comes to boil add in pasta until just al dente.
Drain pasta from water and set aside.
To make the roux: Equal parts butter and flour to make a roux.
Let the roux cook for 1-2 min to cook out raw flour taste.  You’ll notice it start to smell “nutty”, that’s when it’s done.  Slowly whisk in milk to avoid any lumps.
Once you have the mixture to desired thickness add in cheese.
Gently fold in pasta to the sauce and place in oven safe dish. 

Add whatever toppings you want (bacon, chicken, french friend onions, different cheeses, etc.).
Add a few pats of button on top, if desired.  
Cook for about 20 minutes or until golden on top and bubbly.
